Wild Mushrooms on Toast

When I posted this on Instagram, I was surprised how many of you loved mushrooms as much as me! So as requested, here’s the recipe for you to enjoy.

Autumn is the perfect time to indulge in mushrooms on toast and this is the perfect decadent weekend lunch, or even brunch. As much as I love mushrooms, I’ve never been out foraging for them, and I prefer to buy wild mushrooms from Daylesford or Waitrose – there’s no lingering thought in my mind that I might accidentally be poisoning us!

This is an incredibly easy recipe that you can mix up to suit you by changing out the cheese for anything that melts gorgeously such as taleggio, gruyere, or fontina, or perhaps use marjoram or even dried thyme.

For two people you’ll need the following ingredients:

*A few handful of wild mushrooms (I added some extra chestnut mushrooms) / a large punnet of wild mixed mushrooms
*Half an onion, chopped
*A few sprigs of thyme
*One clove of garlic
*Big chunk of butter
*Rapeseed oil
*Palm sized piece of your chosen cheese, cut into smallish chunks
*Couple of slices of sourdough or whatever your favourite bread is to toast – would definitely recommend seeded
*Plenty of salt and pepper

Grab your pan and get it on a medium heat, add some oil and then throw in the onion and thyme (save a little for the end). Cook until translucent, then add the garlic and cook for a few minutes, but don’t let it brown too much.

Add the butter, let it melt and add put in the mushrooms, breaking up some of the bigger ones, and let them cook until they’re softened. No doubt they’ll suck up all the butter, so feel free to add some more and I sometime add a splash of water. Whilst these are cooking, get your bread in the toaster.

Generously season with salt and pepper and add your cheese, constantly stirring it around until it’s all melted and gorgeous.

Once it’s melted, it’s ready, so get it on that toast, sprinkle with a bit more thyme & pepper and serve!
