I don’t know if it’s just me, but has anyone else been aimlessly walking past elderflower plants for years without realising what it was?

I stumbled across this gorgeous, scented flower whilst walking Bella one morning and ever since then I’ve seen it everywhere! Elderflowers don’t last very long and I was given some advice to pick them as soon as they’ve flowered and before they go brown and smell like pee, which is not what you want if you’re thinking about cooking with it.
Now finally after all these years I can make my own elderflower cordial! I looked at some recipes online and decided to go for the most straight-forward one which was from Jamie Oliver.
It was incredibly straight-forward to make and I felt rather proud of myself when I tasted the finished article, which incidentally tastes fantastic with prosecco!

Happy foraging!
A xx
