I know, sounds good, right? If you’re after a refreshing summery cocktail, then I can highly recommend this. It’s easy to make, not many ingredients and you can adjust adjust quantities to your taste.

All you need is:
– Elderflower cordial (my recipe is here)
– Prosecco
– Soda water
– Mint leaves
Muddle a few mint at the bottom of a tall tumbler and add some ice. Pour over a double shot of elderflower cordial, pour in prosecco to about two-thirds high and then top with soda water. It’s as simple as that!
I’ve used soda water, as it’s quite sweet as it is, but if you’ve got a very sweet tooth, you could use lemonade. A nice slice of cucumber would work well here, but our pooch, Bella has eaten all of ours!
