Five things that made me smile this week

Every year, we get some new additions on the other side of the fence and luckily this year is no different. It was quite an ordeal for the horses who are known for their dramatics, but within 15 minutes the sheep, lambs and horses were chomping away, living the dream. If you follow me on Instagram, expect a large number of sheep related posts!

National Vegetarian Week
I’m well and truly in the middle of National Vegetarian Week and I have to say I’m really enjoying it. I had a bit of a hiccup at the start of the week (you can read about it here), but I’m really enjoying thinking about what I’m going to eat and the volume of vegetables I’m eating has gone through the roof!

I think the difficulty is going to come over the weekend as this is the time that I tend to eat meat and we always have a Sunday roast, so this is going to be interesting. I’m potentially thinking about a vegetable lasagne on Sunday, which could be nice, so we shall see.

Although, I could absolutely eat my roasted vegetable stew again (recipe here) and perhaps add a bit of garlic bread to go with it. Yum.

Wild Garlic
It’s wild garlic season and it is in abundance at the moment. I’ve made a lot of wild garlic pesto, which is so easy to make and can be adapted to whatever you have to hand. For me, the key ingredients are lemon juice, olive oil, nuts, cheese and plenty of pepper, but quantity wise it’s up to you. Keep tasting as you go along – can you not taste the lemon? Then add more. You don’t have any pine nuts in the cupboard? Use almonds, hazelnuts, brazil nuts or whatever you may have. If you’ve used loads of olive oil but it’s still too thick, add a bit of water. Make the recipe your own – you can’t go wrong.

The last batch of wild garlic pesto I made, I purposely excluded the cheese as I like to add it to the dish as a last addition and I find the pesto much fresher without it – the beauty is that you can make whatever your heart desires!

Online Shopping
Now I’m not entirely sure this is appropriate, but I’m really relishing ordering items online and even though there’s a delay in pretty much everything arriving, it’s always very exciting when it gets here! I’m ordering everything from wine to bedding to hoodies. I’ve drawn the line at joggers because I know if I order them, I won’t every get out of them, but shopping for things for the house and of course myself, brings a little bit of joy.

At the moment, I’m loving H&M, from their clothing to their homeware. Gorgeous stripes, candles, great and stylish seat cushions and at the moment, anything you order is delivered for free.

P.S. Being 5’10, I always size up, as I like an oversized fit (I don’t like it when shirts are too snug on my boobs, which is sometimes an issue as I’m DD) and the sleeves are longer for my go,go gadget arms!

Exploring
Now that the restrictions have loosened slightly and we can travel to take exercise, we can go and visit one of our favourite woods, in Kingham. We’re not being stupid, Kingham is a 10 minute drive away – excuse me as I sob because the Wild Rabbit pub isn’t open – but we knew before that we couldn’t travel unless it was for essentials, so we didn’t go. However, now we can and fingers crossed I can get another shot like this!

I do find it funny that planning a 10 minute drive away this weekend, is something I’m hugely looking forward to, but this is the strange new world that we live in!
