It’s National Vegetarian Week and I’m in!

As I was tucking into my lunch of leftover chicken (free range of course), from Sunday lunch, I saw as I was scrolling through Instagram, that it was national vegetarian week. Oops.

I think from that first sentence, it’s clear to see that I’m not a vegetarian, but I’m very conscious about the meat I buy and to buy free range, good quality meat it’s rather expensive. And luckily I love a lentil almost as much as I love a steak. Almost.

I enjoy taking part in national vegetarian week and a lot of my meals actually don’t contain meat, but going meat free for a week is a conscious decision. So here we go!

One of the things I enjoy about eating an entirely veggie diet, is that it makes me think (even more) about what I’m going to eat and plan a bit better. I’ve currently got some dried, haricot beans soaking in a bowl and I currently don’t know what I’m going to do with them, but they’re definitely going to be eaten tomorrow! I’m thinking perhaps beans, rice, some of that wild garlic pesto and perhaps some avocado – sounds good right?

I’m a big fan of beans, so I think they’ll be featuring regularly this week and don’t think I don’t know what song you’re singing in your head right now! But when they look this good, how can you resist?

I also have a love for grains; quinoa, bulgar wheat, lentils, rice – you name it, I love it. Especially tabbouleh as I’ve fallen back in love with parsley all over again. Look at all that yumminess!
