
Glad to see this day again – recently realised that the last time I had more than a day off was when I had laryngitis a couple of months back and was signed off work for a week. No my ideal type of holiday, so looking forward to a couple of weeks off at the end of September. Got the rent’s wedding and then we’re going to drive over to Bruges for a few days, followed by a few days of rest & relaxation at home. CANNOT WAIT.
Homemade Pizza
Last weekend, we decided to break tradition and omit the Sunday lunch for a homemade pizza. The weather was glorious and we had intended to have pizza on Saturday night, but I had forgotten that we didn’t have any yeast, which is kinda important, so Sunday night pizza it was. I’ve played around with different recipes to perfect my own – my recipe creates two, thin bases as I don’t like a thick base, so give it a go!

Shed

Yes, we have a shed! Now I understand that this would not be exciting for some people, but for us, this is huge. Our front room has been our dumping ground / shed since we bought the house and having a shed means that the front room has been cleared. I came home from work one night to find that the Handsome One had worked tirelessly, to erect (hee hee!) the shed and not only that, but move all of the stuff from the front room into our shed. Leaving us with our lovely and spacious front room!
Not having full access to the front room, has put a stop on the next wave of renovation, but now we can crack on. There is some chasing of the electrics to be done and then this will need plastering, which leads onto the fun stuff… Choosing paint for the walls, sofa hunting and spending hours on Pinterest to create our dream front room.
Comfort Food
This week it came in the form of butternut squash pasta. Have you ever tried it? It’s a game-changer! At least one a week we have a meat-free day and always try to do meat-free Monday, as this is something that I’m massive advocate of but this week I was lazy and we had scampi.
So on Tuesday I was keen to make up for my laziness and I had a butternut squash that I was keen to use as well as had a hankering for pasta, so butternut squash pasta it was. I’ve never made this before but it was incredibly easy and quick!
Chop and boil half a butternut squash, then blend with some organic vegetable stock & season, cook the pasta in the water you used for the squash, heat a pan with some olive oil, fry half a dozen sage leaves, remove and add 1/2 an onion and a garlic clove then add the blended squash. Once your pasta is cooked (I used linguine) add this to the pan with the blended squash, stir through and serve in bowls with the sage leaves. Et voila!

The Harvest Continues…
I’m so pleased that every day I can pick something from the garden; whether it’s a couple of tomatoes, a cucumber, a courgette or even just a lone runner bean, I feel so proud of what I’ve accomplished from seed! This gardening malarkey is addictive.

Hopefully I haven’t left it too late to plant my potatoes for Christmas – I plan on popping to the garden centre this weekend to get some. Fingers crossed they’re ready in time!
Girls night in

The Handsome One is going out with his friends on Friday night, which means it’s just going to me, Bella and the chickens! We have big plans to do pretty much nothing.
I’m thinking a tasty supper of chicken & rice, which is my favourite comfort food as it reminds me of Nanny & Granddad, a walk around the village with my favourite hound, cuddles with the chickens, a leisurely bath surrounded by candles and a glass of Pinot Nior with my book (currently reading Up With The Lark by Joan Bomford – great so far), and an episode of something trashy on Netflix or Amazon Prime in bed.
Out of all of that, I bet the thing that takes me the longest will be choosing something to watch! Any recommendations welcome.
No doubt I’ll be up relatively early as I’m sure I’ll be knocking the zzz’s out by 10.30pm… I plan a leisurely morning with a cuppa, then Bella and I will partake in a lovely country walk and pop into Moreton-in-Marsh to get the paper, visit the butchers and we might have to stop for a coffee.
