Spicy, nutty, tangy and tasty – what’s not to love?
Is it weird that I’m not a massive fan of peanut butter on its own? I love peanuts and I love butter, but I find peanut butter on its own to be a bit tacky and dense – it gets stuck to the roof of my mouth and that freaks me out! However, add me some chilli, soy sauce and a few other bits and pieces, and I’m in!
One thing I will say about peanut butter is do not scrimp when you’re buying it – buy organic because it really does taste so much better and is not full of sugar. My personal favourite is Meridian; it only has one ingredient – peanuts. No added preservatives, no palm oil (even Whole Earth has palm oil in it), just totally natural and 100% tasty.

This sauce has a wide array of uses; spoon it over a free-range chicken breast, stir it into veggies or use it as a salad dressing and plenty more choices! Another thing is that the best tasting satay depends on your tastes, so play around with the ingredients by adding more or less and continue to taste along the way (like you need any encouragement!).
To make enough sauce for two you will need:
- Two heaped tablespoons of peanut butter (crunchy ideally but smooth is fine also)
- Two tablespoon of soy sauce
- Juice of one lime
- 1/2 red chilli
- Small piece of ginger
- One clove of garlic
- One spring onion / 1/4 of a red onion
- Water (amount depends on what consistency you want to sauce)
Method
Apart from the water, chuck everything in the blender and whizz! Gradually add the water until you reach the consistency you want and make sure you try it – sometimes you need a splash more lime, a bit more chilli (if you’re feeling brave) or some more water.
Make it to your taste as you’re the one that’s eating it!
Sometimes, I add a couple of tablespoons to some free range chicken breasts before I put them in the oven, so they cook in the satay and then spoon the remaining sauce over once I’ve cut the breast in slices.
Another easy and quick supper, is to stir fry a load of vegetables that you’ve got in a little coconut oil (Lucy Bee, always) and then stir in about half of the sauce at the end and either add some rice noodles to the stir fry or some brown rice.
