I know the avocado train has been well and truly exhausted, but as a massive avocado fan myself I had never tried avocado sauce before and I realised I was missing out!

This is the easiest sauce to make and perfect accompaniment for a variety of dishes such as pasta, salads, potatoes, rice, literally anything. Apart from a Sunday roast, that would just be weird.
You can mix it up by omitting the basil and adding coriander and lime juice, or anything you fancy! I’ve thrown in a load of spinach before and that’s lovely.
To make the sauce you’ll need;
- One medium avocado
- Juice of 1/4 or 1/2 a lemon (depending on your taste)
- 1/2 a chilli (or you could add a few jarred jalapeños instead)
- Handful of basil (or parsley)
- Two tablespoons of extra virgin olive oil
- Salt & pepper
- 1/2 cup of pasta water

Method
- Bung everything in the blender and hey presto (not pesto – gawd, I make myself chuckle)!
- Taste, taste and taste – it’s your sauce – does it need more seasoning? What about lemon juice?
- If the sauce isn’t at the consistency you like, then add some more pasta water.
Serve with a simple green side salad and a bowl of gorgeous green olives.
